Once you Try Smashed Avocado with Goat Cheese on Charred Toast
There’s no going back! A healthy Breakfast or lunch made in the time it takes to toast the bread. There’s a certain magic that happens when you combine goat cheese with avocado.
You’ll need a good ripe avocado and some mild fresh creamy goat cheese, not the aged dry type. I used a marinated goat cheese which is soaked in olive oil with thyme and garlic for extra flavour. The oil in jar can also be drizzled on, instead of using another olive oil. You can of course use standard non marinated goat cheese, with separate olive oil.
Get some rustic wholegrain sourdough bread, or better still, make it yourself as I did, see my recipe. If you can, char it on a griddle pan of BBQ, that subtle smoky flavour makes all the difference. If you’re in a hurry, use a toaster.
The rocket lettuce leaves add a touch of green with spicy pepperiness. The lemon zest cuts through the richness for that fresh taste.
