For the perfect heavenly mashed potatoes, firstly you need to buy the right potatoes. Go for the starchiest you can find. Always mash them while they are steaming hot inside and it’s also a good idea to heat up your mixing bowl. Don’t ever use a blender or any electric appliance of any kind or you will ruin it. The wooden spoon or a fork are your best options, it will fluff up your mash, and avoids it releasing the starches that can make the texture gluey. The ricer will add extra fluff and help eliminate lumps. I used the three heads of garlic as it does lose its pungency once roasted, so don’t be scared, however two heads will still be fine if you want a little less garlic.
