Forget packet mixes, try this easy and fast recipe, so quick you can cook it for for unexpected guests. It’s my Mother’s secret recipe so please keep it to yourself, well not really, happy to share! Enjoy.
Crack the eggs in a large mixing bowl.
Add the sugar and mix well.
Sieve and add the flour.
Add the baking powder.
Mix thoroughly.
Add the melted butter
Mix well.
Butter your mould/s
Fill two thirds with mixture.
Add sliced plums (8 slices per fruit).
Coat plums with melted butter, sprinkle caster sugar.
Bake in oven at 180C for 20 minutes
You can also use other fruits such as apple, apricot, pear etc. Poach the fruit in a little sugar syrup if you prefer a sweeter taste.
