A piadina is a type of Italian flat bread that can be filled with many different exciting fillings. You can make it from scratch, or alternatively, buy readymade flat bread. Either way I guarantee a delicious meal that even the kids will enjoy. Piadina is also a fun Italian street food in which you’ll find many combinations of fillings.

The flat bread dough comes together by simply mixing flour, water, olive oil, baking powder and salt. You can make it by hand as I did, or use a mixer to knead the dough. I suggest making extra dough, as you can freeze it ready to cook anytime for fresh bread. For the filling, I have kept it simple. Cheese, rocket lettuce and prosciutto. You can use Mozzarella cheese or (My preference) squacquerone if you can find it.
