The pizza base is the most important part of pizza making, a great base equals a great pizza. I find that it’s easier to make on a warmer day than a cold one, however I’ve made plenty of pizzas in the Winter months that turned out great. This recipe uses no help from machines and can be made in 15 minutes plus proofing time. Below is a different method of using poolish. I made up this calculator which took me years to perfect.
