Where Italy meets South Asia. Tandoori chicken is normally cooked in a clay oven. This recipe works well as the pizza is cooked in a similar way by using a pizza oven which also has an open flame. The fiery red colours and the wood smoke aroma makes this gourmet pizza a hot winner.
In a small mixing bowl, mix together 3/4 of the yogurt, lemon juice, garlic, ginger and all the spices.
Slice the chicken thinly and add to above mixture. Mix well until all pieces are coated.
Leave to marinate in fridge overnight for best results. (otherwise a minimum of two hours).
On a slightly floured surface, take one ball of dough and flatten it with your hands pushing outwards. If too difficult use a rolling pin. Stretch until it reaches a 12 inch diameter circle (approx.).
Spoon on the pizza tomato sauce, at least one inch away from the edges. (Do not use too much, you should still see 30% of the base.
Add the pieces or slices of mozzarella cheese.
Slice thinly the red onion and add some onion rings.
Add the thinly sliced chicken pieces.
Bake in hot pizza oven. (temperatures and cooking times can vary, I recommend 3 minutes at 400C – 750F.
Once cooked, add roughly chopped coriander, a few dollops of yogurt and a few rocket leaves.
Slice and serve.
Temperature of 750F or 400C is ideal. (very hot) or a minimum of 570F or 300C
