Rich Lamb ragu has to be the ultimate comfort food.  When I think of Italian Nonnas, this is what I imagine. This version is made using  Fusilli al Ferretto pasta, but you can make it with the pasta of your choice.  This fusilli shape works so well with this lamb ragu as it wraps itself inside and out resulting in pure awesomeness in every mouthful.    Make a big batch and freeze it, double or triple this recipe, it’s well worth it and not much more effort.  You will however need a large Dutch oven pot for larger quantities.  You can also do it on the stove top on very very low flame, stirring it every 15 minutes or so.  I prefer the oven as you leave it and forget it, plus the flavours seem to intensify.  Enjoy this lamb ragu pasta with fusilli or your favourite pasta.
