Instead of heavy beef, I use lean chicken mince. It’s lighter, cleaner, and it lets the Passata sauce actually shine. That thick tomato sauce sinks into the rice and keeps everything juicy without turning it into a brick. And when the mozzarella melts and bubbles on top, it goes golden around the edges. That’s the part you fight over, or at least I do!
