Rinse quinoa well to remove bitterness.
Add to a saucepan or a pan.
Add the water or stock and bring to the boil (season to taste).
Once boiling, turn heat down to a gentle simmer.
Cover with lid and cook for 15-20 minutes, or until the bottom is totally dry.
Once the liquid has been absorbed, remove from heat and fluff up with a fork.
You can dry toast the quinoa until it slightly changes colour, before adding the water. This will give it a pleasing flavour.
Cook the same with quinoa as you would with rice.
