A quick and easy meal that’s incredibly tasty. The flavours of Italy wrapped in a toasted tortilla with melted cheese and smoked ham.
Slice and dice the chicken breast into bite size pieces and place in a bowl or a plate.
Add cracked pepper.
Add the oregano and mix well so each piece is evenly coated.
Grate all the Swiss cheese and keep aside.
Peel the garlic cloves and keep aside.
Place a frying pan on moderate to high heat, add the olive oil and butter.
Add the chicken pieces, a little salt and toss well for even cooking.
Once the chicken has browned a little, grate and add the garlic. Cook for a few minutes, remove from heat and keep aside.
Place a griddle pan on low heat.
Place your tortillas flat on bench and brush with olive oil, ensure you coat the whole thing.
Flip tortilla and brush the whole other side with one tsp of Dijon mustard.
Place a piece of ham more towards one half of tortilla.
Place half your chicken pieces on the ham.
Sprinkle half the grated cheese on chicken coating the whole half the tortilla.
Fold tortilla in half and place in griddle pan on low heat for 3-5 minutes (check it’s not burning).
Flip over and cook other side for another 3-5 minutes on low heat.
Remove from griddle pan, repeat process, cut in half and serve immediately.
You can also use a standard frying pan to toast, however you won't get the grill marks.
Serve with a nice salad or even a salsa.
