It’s a Cherry Cake with Amaretto! When it’s cherry season you can’t beat a good cherry cake. This cake is made using some almond meal and amaretto liqueur. It’s similar to a clafoutis but lighter with an almond flavour that truly marries well with cherries. If you don’t have amaretto liqueur, you can substitute with natural almond extract. If it’s not cherry season, you can also replace them with sour or preserved cherries, use the liquid to pour on the cake.
