Forget mayonnaise! This isn’t your regular grilled cheese sandwich, it’s an elevated version that combines melted Mozzarella richness and Provolone’s smooth creaminess. Inspired by rustic European sandwiches, it’s pan-toasted with butter until golden and crispy, then rubbed generously with fresh garlic and seasoned with plenty of cracked pepper. Pressed while cooking to create a perfect crunch, this sandwich balances simplicity with luxurious flavours, making every bite unforgettable.
Layer slices of mozzarella on two bread slices, generously sprinkle with grated Provolone, and add plenty of freshly cracked black pepper.
Top with the remaining bread slices and spread generously with butter. Place a sheet of parchment paper over the buttered surface and flip. Butter the other side.
Place the sandwich in a cold frying pan over very low heat, butter-side down, with the parchment paper facing up. Press down firmly with a weighted object, like another pan or a heavy plate, to achieve a crisp, evenly browned crust. Once the bread is deeply golden and crunchy (about 5-7 minutes per side), remove the parchment, flip, then replace the paper and weight.
Remove the sandwich from the pan and immediately rub the crispy bread with a peeled, halved garlic clove, allowing the fragrant oils to infuse the toast.
Rest the grilled cheese upright in a wire toast rack or lean diagonally against a small dish to keep air circulating, avoiding a soggy sandwich.
