Ingredients

• 2½ cups - 700ml full cream milk
• 1½ cups - 300ml heavy cream (thickened)
• 1 cup - 150g sugar
• ¾ cup -80g corn starch (flour)
• 3 whole eggs
• 3 egg yolks
• 1 Vanilla bean (or extract)
• 300g Pie crust (see my pie crust recipe) or Puff pastry

Steps

• Step 1

  Preheat oven to 340°F – 170°C

• Step 2

  Roll out your pastry ready for use.

• Step 3

  Grease a 9½ X 2 inch cake tin thoroughly with butter. Roll out your pastry over the cake tin and lower the sides deep into the bottom. Prick a few holes on the bottom using a fork. Leave to rest.

• Step 4

  Place the milk and cream into a large saucepan with the vanilla bean that’s been split in half along with its scraped out seeds. Place on medium heat and bring to a simmer. Keep an eye on it as it will over boil.

• Step 5

  While the milk is heating up, in a large mixing bowl, add the sugar, 3 whole eggs and three egg yolks. Cream (whisk) the eggs and sugar until the sugar is almost dissolved. Sprinkle in while whisking the corn flour. Whisk well until smooth.

• Step 6

  Once the milk has just started to simmer, pour a little milk as you whisk into the mixing bowl. Whisk well then pour the remaining mixture. Mix a little and place a strainer over your milk saucepan and pour back the mixture into the same saucepan. Place on the stove on medium heat and whisk until thick. Once thick turn heat to very low and keep whisking for one minute. Turn off heat and whisk another minute and pour straight onto the pastry in the lined cake tin.

• Step 7

  Place in oven and Bake for 30-40 min at 340°F – 170°C. Once you remove from oven it will still appear quite wobbly, that is normal. Leave to cool 30-60 minutes.

• Step 8

  Place a cooling rack over the top, flip both upside down and remove cake tin. It should come out easily. Place a serving plate on top and flip back again. Cover and refrigerate overnight. No you can’t eat it now! 😉

• Step 9

  Remove from fridge, uncover and it’s ready to slice. Enjoy!

Little Tips

Make sure your milk doesn't burn on the bottom of your pot. If so, wash before re-using.
