Beans are one of those wholesome foods we should all be including more often. I certainly do, either from dry beans or from cans when I’m short on time.
Today, I’m a little lazy, yes I get lazy too, so I’m using cans. You can use the beans you like. I used red beans, butter beans and borlotti beans. This Mediterranean salad is so tasty because it blends a variety of textures and bold Mediterranean flavours.
