Ingredients

• 1 onion (chopped)
• 3 or 4 gherkins
• A handful of fresh parsley
• 2 tbsp capers
• 2 egg yolks
• 2 tbsp of Dijon mustard
• 120 ml - ½ cup of avocado oil (you can use any vegetable oil, but not olive oil)
• salt and pepper
• Half lemon squeeze (optional)
• Season to taste

Steps

• Step 1

  In a small food processor, add two egg yolks.

• Step 2

  Add the Dijon mustard.

• Step 3

  Turn on food processor and blitz.

• Step 4

  Very slowly add half the avocado oil.

• Step 5

  Stop the food processor.

• Step 6

  Add the chopped onion

• Step 7

  Roughly chop the gherkins and add to processor.

• Step 8

  Add the capers with a little of their liquid.

• Step 9

  Add the parsley and (optional half lemon juice) and blitz.

• Step 10

  Transfer to glass jar, cover and refrigerate.

Little Tips

You can also add the tarragon herb.
You can also make this recipe by hand, look up "Mayonnaise Recipe" and just very finely chop the gherkins, capers, parsley and onion and mix with mayonnaise.
