Ingredients

• 175g - 6oz of Penne pasta
• 8 thin slices of salami
• Half small onion, peeled
• 1 or 2 garlic cloves
• 1 sprig of flat Italian parsley
• A few basil leaves
• 4 tbsp of Virgin olive oil
• 8 pitted black olives (slice in half)
• 1 or 2 anchovies
• 150ml - ½ cup of Passata or crushed tomatoes
• A little Pecorino cheese

Steps

• Step 1

  Tear the salami in strips.

• Step 2

  Boil some water in large pot.

• Step 3

  Chop the half onion finely.

• Step 4

  To a pan, add the olive oil on medium heat.

• Step 5

  Add the salami, fry a little then the chopped up onion.

• Step 6

  Stew the onion until soft.

• Step 7

  Add grated garlic and continue stewing for a few minutes. (Do not caramelise)

• Step 8

  Add the anchovies.

• Step 9

  Add the olives.

• Step 10

  Add the Passata

• Step 11

  Add a little crushed black pepper.

• Step 12

  Chop some flat Italian parsley.

• Step 13

  Add your pasta to boiling water and cook for 10 minutes. (approx.)

• Step 14

  Once pasta is cooked al dente, strain and add to your pan with a little of the cooking water.

• Step 15

  Add the chopped parsley.

• Step 16

  Grate a little pecorino cheese.

• Step 17

  Garnish with fresh basil leaves.

Little Tips

Cook al dente.
If buying pitted olives, slice them in half lengthwise to double check there are no pips. They break teeth.
