Ingredients

• 2lb - 1kg Potatoes
• 3 eggs (yolks)
• 1 ½ cup (6oz – 170g) sliced ham
• ½ cup (3/4oz 25g) chopped Chives
• 3oz- 80g butter
• ¼ tsp Nutmeg (fresh or ground)
• Salt and pepper
• Drizzle of olive oil
• ¼ cup bread crumbs

Steps

• Step 1

  Peel the potatoes, rinse then cut into three, place in deep saucepan well covered with water. Bring to a simmer and cook until very tender, approx. 25 – 30 minutes.

• Step 2

  Strain potatoes using a colander and set aside to drain thoroughly.

• Step 3

  Using a ricer or a masher, mash the potatoes in a mixing bowl.

• Step 4

  Melt the butter in microwave or on the stove and pour into potato mash. Add, sliced ham, chopped chives, grated nutmeg plus salt and pepper and egg yolks last, mix well.

• Step 5

  Line a baking tray with parchment paper. Oil a round pastry cutter on the inside and place it on the paper. Using a spoon, scoop out some potato mixture and fill it the cutter. Press it in well then remove as you push down with a spoon. Top with breadcrumbs, flatten sides using your fingers (gently) and drizzle olive oil. Repeat step until you use up all the mixture. There should be 12 pieces.

• Step 6

  Bake in oven for 15-20 min at 430°F – 220°C or until golden brown. Lift of the pan with a thin metal spatula and serve immediately.

Little Tips

I used a 2 ½ inch or 65cm round cutter.
