This French carrot salad is a classic from everyday French home cooking but with a twist. It’s fresh, crunchy, and full of zing from the lemon Dijon dressing. The apple adds natural sweetness, while the walnuts give it a lovely crunch. It’s the kind of dish you find in a French bistro next to a quiche or roast chicken. It takes no time at all to make with a food processor, but even a box grater will do the job.

Carrots are packed with vitamins, so it’s also healthy and great for your skin.

If you’re walnut aren’t French giving them a quick toast will enhance them.  I like to top it with a poached egg for a light meal, I do that a lot for a quick healthy lunch!
