Ingredients

• 6 eggs, hard-boiled and peeled (see my recipe)
• 2 tbsp mayonnaise
• ½ tsp Hot chili powder
• 6 minced anchovy fillets
• 2 tbsp small capers, rinsed, dried and chopped, plus whole capers for garnish
• 2 tbsp chopped fresh flat leaf parsley, plus small whole leaves for garnish
• Salt and pepper

How to make hard boil eggs that are easy to peel!

Steps

• Step 1

  Cut hard boiled eggs in half lengthwise using a small paring knife.

• Step 2

  Place a medium fine, metal sieve over a mixing bowl. Remove the egg yolks from the whites and place into the sieve. Using a spoon or a small ladle, push the egg yolks through the sieve to fluff them up and remove any lumps.

• Step 3

  Add the chopped capers, chopped anchovies, chili powder, chopped parsley and mayonnaise. Mix well.

• Step 4

  Place mixture in a plastic piping bag using a medium large star nozzle.

• Step 5

  Pipe mixture directly into the cooked egg white halves.

• Step 6

  Refrigerate and serve same day.

Little Tips

Spin the eggs before boiling to centre the yolk.

If you're like me and you want high toppings (looks better), then you may have empty egg white leftovers. Sacrifice them by eating eating them. Otherwise, simply pipe mixture slightly above egg level, and you will have enough.
