This recipe is pretty fool proof and the flavour is as good as it gets. It’s the perfect addition to any chicken dish or any type of poultry.
This recipe is pretty fool proof and the flavour is as good as it gets. It’s the perfect addition to any chicken dish or any type of poultry.
Place chicken wings with all above (highlighted in green) ingredients in a large roasting tray.
Add to tray, finely chopped carrots
Add to tray, finely chopped onions.
Add to tray, finely chopped celery
Add finely chopped bacon
Add thyme
add the two bay leaves
Mix very well ensuring everything is coated in olive oil.
Place on stove to heat up tray, until slightly sizzling.
Place for 45 minutes in preheated oven of 180C/350F making sure of turning the pieces every 20 minutes or so and scraping the bottom of dish to avoid burning.
Once cooked, place on stove burner, low heat and add the flour, mix well.
Add the water and bring to a low simmer, scrape with wooden spoon all the brown parts stuck to the bottom of the tray. Keep simmering for approx. 20 to 30 minutes.
Once it reaches the right consistency, strain through a fine sieve into a pot.
Bring to a slow simmer, remove scum and fat from the top, check seasoning.
Let cool down before refrigerating.
Making gravy in advance and freezing it in small batches is a great idea to substitute chicken cubes. This is also a great turkey gravy, just add the juices from your roasted turkey for extra flavour. You can also snack on the meat still in the chicken wings, I know I do ;)
