Basil aioli has to be made with fresh basil. It’s great on fried fish, poached salmon, boiled vegetables etc. Basically anything boiled or poached.

Separate two egg yolks into kitchen blender.
Peel and add the garlic.
Add the Dijon mustard.
Turn on kitchen blender and slowly pour the olive oil. (very slowly at the start).
Stop the appliance , add the lemon juice.
Season with a little salt and pepper,
Chop the basil and add to appliance.
Blitz until finely chopped, serve or refrigerate.
Other herbs instead of basil can be added for different flavours.
Make sure your friends eat some too, as your garlic breath will be quite potent.
Great on seafood, grilled lamb, boiled eggs, steamed vegetables.
