Aioli is a fragrant mayonnaise made from olive oil and garlic.

The name means “Garlic Oil”. It can be used on grilled meats, grilled or boiled vegetables, seafood and much more. It’s also great on raw tomatoes and boiled potatoes. It has a delightful but pungent flavour.

Ingredients

3-4 garlic cloves
2 egg yolks
250ml - 1 cup olive oil (first pressed)
2 tbsp Dijon mustard
Half lemon, juiced

Steps

Step 1
Separate two egg yolks into kitchen blender.
Step 2
Peel and add the garlic.
Step 3
Add the Dijon mustard.
Step 4
Turn on appliance and slowly pour the olive oil. (very slowly at the start).
Step 5
Add the lemon juice.
Step 6
Season with a little salt and pepper, serve or refrigerate.

Little Tips

Other herbs can be added for different flavours.
Ensure sure your friends eat some too, as your garlic breath will be quite pungent.
Great on seafood, grilled lamb, boiled eggs, steamed vegetables, use as a dip.
Also placed on croutons in seafood soup.
