Ingredients

• 3 large cooking apples (Golden delicious, Granny Smith)


• For the batter

• 2 whole eggs

• 3.5oz -100g white sugar

• 6.3oz - 180g (1 ½ cups) All purpose plain white flour
• ¼ cup - 60ml milk

• 3.5oz - 100g salted butter

• 1.5 tsp baking powder

• For the cinnamon sugar

• ¾ cup - 150g white sugar
• 2.5 tsp cinnamon
• Nutmeg (around ⅛ tsp)
• 8 tbs - 120g salted butter, melted
• Pinch of salt

Steps

• Step 1

  Peel, core and thinly slice the apples.  Don’t leave them out too long or they will go brown.

• Step 2

  For the cinnamon sugar mix. In a small bowl, mix the white sugar, 2.5 tsp cinnamon, nutmeg, melted butter, and a pinch of salt until combined. Set aside.

• Step 3

  Crack the eggs in a separate large mixing bowl. Add the sugar and milk,  mix until ingredients are well incorporated. Add the sifted flour and baking powder, mix thoroughly. Add the melted butter Mix well.

• Step 4

  Pour the cake batter into a well-greased (buttered) 11inch – 28cm tart mould. Add or swirl half of the cinnamon sugar mixture into the top of the batter. (keep it away from the edges) Arrange a layer of apple slices on top, pressing them gently into the batter.

• Step 5

  Brush the remaining cinnamon sugar mix over the apples, (Again, keep it away from the edges or it can burn) then bake in oven at 350°F – 180°C for 25-30 minutes. Check with a skewer for doneness.

Little Tips

Use a mix of tart and sweet apples, even pears for a deeper flavour. Granny Smith and Golden Delicious work perfectly together.

If preparing your apples in advance, toss them in lemon juice so they don't go brown. Always slice them at the last second.
