Another simple to make recipe, perfect when you’re in a hurry but still crave a restaurant quality meal at home. This Cod or any thick white fish recipe combines Asian flavours with a fresh, zesty twist, making it a perfect light and healthy meal. I used Australian Blue Eye fish which is quite thick. If your fish is thinner, adjust cooking time accordingly.
This dish is inspired by my travels in Asian countries, using basic ingredients like soy sauce, sesame oil, which bring an umami-rich depth, and bok choy for a healthy green.
The wine of course is the French in me, but you could just fish stock instead if wine is not your thing.
The new season of a fresh spinning lemon adds a subtle freshness, while the fresh coriander keeps it vibrant.
As an option, you can top it with fried shallots for that nice texture and hint of onion flavour, but that’s optional. You could fry them yourself in oil on a lower heat, or buy them already made from Asian stores.
