Roasting vegetables is like a culinary magic trick that turns simple veggies into a delicious meal. This pasta is topped with beautiful melted cheese, over pasta, on roasted veggies. A complete meal and very satisfying dish.
Roasting veggies is super easy and convenient. Just chop them up, throw them in the oven, and forget about them for 30 minutes or so. No need to babysit or flip them halfway through cooking because they are cut in different sizes so they all finish cooking at the same time.
The best part? While your veggies are roasting away, you’re free to relax and watch some of my travel videos. While you’re escaping to a tropical paradise island, let me tell you, the smell coming from the oven is like a sneak peek of the amazing flavours waiting for you. Sadly it doesn’t impress Whiskey! (Whiskey is my carnivorous Collie dog incase you didn’t know).
But here’s the secret to perfect roasted veggies: give them some space on the baking sheet. If they’re too crowded, they’ll end up steaming instead of getting that crispy, caramelised goodness.
And don’t forget the golden rule of roasting: preheat your oven nice and hot, around 400°F (200°C), then lower it to 350°F (180°C) once the veggies are in. This ensures they cook evenly and get that mouthwatering caramelisation.
