A very basic white bean recipe that’s healthy and full of fibre. This will adapt to any white bean recipe but the cannellini kidney shape bean seems to hold up its shape a lot better. It’s a basic dish that’s very tasty, you need to use a good quality first pressed virgin olive oil for great results. Use freshly cracked pepper and if you can, fresh rosemary. It’s best to salt last so they retain their shape. Older beans will take longer to cook, 30 to 45 minutes, fresher beans can cook as quickly as 20 minutes. The bicarbonate of soda adds an alkaline that helps the bean keep its shape and speeds up the cooking process. This step is however optional.
