Ingredients

• 4 Egg yolks
• 1 cup of cream (heavy)
• 4 tbsp icing sugar (powdered sugar)
• 1 tsp vanilla essence

• Berries and Fruits of your choice

• Cherries
• strawberries
• Raspberries
• Mango
• Kiwi fruit
• Black berries
• Red currants
• Blueberries
• Passion fruit
• Vanilla ice cream (2 scoops)

Steps

• Step 1

  Prepare your fruit and berries ready to serve. Cut strawberries, mango, kiwi fruit into slices.

• Step 2

  Break 3 egg yolks into a flame proof mixing bowl. Add the cream, icing sugar (powdered)and vanilla essence. Over a very low flame, whisk vigorously until the mixture thickens and feels warm to the touch. Do not scramble the eggs, so keep whisking for approx 5 minutes.

• Step 3

  Pour and divide the mixture on to two plates. Creatively arrange the fruit and berries around the plate leaving room in the centre. Place under the very hot grill (broiler) and cook until a light golden brown colour. Watch it carefully as when it starts to brown, it can burn in seconds.

• Step 4

  Place a scoop of ice cream in the centre and scoop out the passion fruit pulp. Sprinkle more icing (powdered) sugar on top and serve immediately.

Little Tips

You could also add your favourite liqueur, such as Cointreau, Grand Marnier etc.
