I have a great deal of fun cooking with your recipes. Because I am very new at cooking like this your videos are of great help. Only one complaint! The new layout of your website is very bad. When I print the recipe it has the picture, ingredients, and the steps. IT DOES NOT PRINT WHERE IT CAME FROM (Recipe30) OR THE NAME OF THE RECIPE.
ALSO: the old style printed on only one page. The new one takes two and three pages.
Could you look into this and have it read and print in a better fashion, more like the old one.

Most of my recipes use basic available ingredients for convenience. The Asian ones may require additional products however there’s also short cut options to make it easier.

Hi Joel , I am a big fan of your recipes and have been following you for some time now .
Every time I try one of your recipe , their is excitement, not only in the kitchen, also in the home .
In fact , I am constantly getting request from my family to make one more time .
I have never cooked a desert before, when I saw your ‘ Mille Feuille ‘ it looked so delicious and inviting, i had to test my skills .
I have made it twice so far and every time , the taste is absolutely delicious, the only problem I have is that the pastry will go soggy after about 1 to 2 hours .
Do you have any suggestions as to why this is happing ? .
I have tried using different amounts of the cream, thinking this may cause the pastry to go soggy, I also make sure the strawberries are clean and dry before using them .
I will look forward to your suggestions ,.

Hey Gordon, I’m so happy to hear you’re creating excitement at home with cooking! As for the soggy pastry, it’s quite normal for that to happen, one trick that is often used in French patisserie, is to brush a thin layer of melted chocolate on the pastry, white chocolate would work better for this recipe, this creates a barrier stopping any moisture entering the pastry keeping it crisp. Plus who minds a little extra chocolate! You could also do that with unsalted butter. Hope that helps and thanks for your comment! Joel.

hi Chef! first i want to congratulate you for being the best. i have done many many of your recipes and they are delicious. better yet, you make the process easy for us.
my 2 questions: what other fruit could i use for the apricot turkey stuffing. i live on PR, the caribbean, so apricots are difficult to get.
2- please teach me how to do perfect french fries. mine get soggy.

Hi Jennie,
You should be able to buy dried apricots in packets. Dried apples might me another option but it’s impossible to substitute the apricot flavour.
I’ll put French fries on the list.
