Dice your peeled tomatoes into small cubes and add to a mixing bowl along with the following.
Chop your onion finely, add to bowl.
Add one teaspoon of cumin.
Add garlic, crushed.
Add one whole lime juice.
Chop the coriander (cilantro) and add to bowl.
Slice half the chili very finely and add (use enough to suit your taste)
Add one tsp of salt.
Add some cracked black Pepper.
Cover and refrigerate.
Don't keep it for more than five days in the fridge.
You can use a food processor, use pulse action until just right. Too long and you will have a soup.
Add a little olive oil and serve it as a type of bruschetta on toasted bread.
Add a tbsp of vinegar from that extra zing.
