French toast, usually served as a sweet dish, also makes a beautiful savoury meal. Known in France as “Pain Perdu” which translates to “lost bread or stale bread” was once a recipe to re-use the old bread avoiding wastage.

Pre heat oven to 180C
In a small bowl or mixing bowl, crack two eggs.
Add the milk and whisk a little until egg and milk are combined.
On each bread slice, add the chicken pieces.
Add the tomato slices.
Shake a little oregano.
Add the slices of cheese.
Soak your bread sandwich into above egg and milk mixture.
In a 12 inch pan (skillet), melt the butter.
With a spatula, lift bread into pan.
Lower heat to minimum and cook until brown. (lift toast to check every 30 seconds).
Once brown turn over and repeat process.
Place in preheated oven for 10 minutes.
Slice and serve immediately.
French toast is quite rich and goes well with an acidic dressed salad.
Can also be made with different fillings such as ham and cheese, turkey avocado etc.
