Place the lamb mince in a large mixing bowl.
Chop the parsley finely.
Dice the tomato.
Add chopped parsley, diced tomato, crushed garlic, zest of one lemon, salt, pepper, harissa spice, 4 tbsp olive oil and mix well using your hands.
Open up the pita breads either by hand or by using a knife and only open half way so you have a pocket.
Using your hands, stuff the pockets with the meat mixture flattening it to cover the whole surface. Flatten the pockets so the meat is spread evenly.
Brush the top of pita bread with oil and place top down into an oven proof frying-pan.
Bake in pre-heated oven for 15 min at 350°F – 180°C or until golden brown.
Remove from oven, using two flat utensils, flip the pita bread over and return to oven for another 10 minutes.
Slice and serve immediately.
A simple yogurt dip can be made with garlic, lemon juice, seasoning and chopped chives.
Cooking it with the top down first will reduce the chances of sticking.
You could also use minced chicken or beef.
