Curly fettuccine is an elegant and appealing shape as it grips onto any sauce giving you maximum flavour with each bite. It’s also known as Tripolina. Try this recipe reflecting the essence of the Mediterranean.
Chop one whole onion finely.
Cut tomatoes in chunky pieces.
Cut olives in half and remove any pips.
To a hot pan, add a generous amount of olive oil and stew onions.
Add the crushed garlic.
Add the diced tomatoes.
Add the olives.
Add the capers.
Add the oregano.
Add finely sliced anchovies.
Cook pasta in boiling salted water. (until al dente)
Add crushed black pepper. (no salt required)
Drain pasta once cooked and add to mixture with a little cooking water.
Mix well and serve with grated Parmesan cheese and a few basil leaves.
The anchovies will salt the sauce, no need to add salt.
