Soft, silky chicken and rice bursting with flavour! This dish is called Hainanese Chicken Rice, and when I travelled to Singapore it appeared to be one of the most loved meals.

It started in Hainan, China, but Singapore made it famous. The chicken is poached so gently it stays super juicy and tender, the twice heat method is the secret.

The rice is cooked in the same flavourful broth, which gives it a rich, comforting taste. What makes it special are the three sauces, savoury, spicy, and punchy with ginger, each one adds something different. It’s simple, tasty, and comforting, all in one bite.
