Very simple to make under 30 minute meal. The cream and Parmesan cheese, flavour the chicken keeping it moist in its prosciutto wrapping.
Preheat your oven to 400°F – 200°C.
Cut your chicken breasts in half lengthwise.
In a frying pan on medium heat, add a little olive oil and sear (not cook through) your chicken pieces on each side. Once seared, leave aside to cool.
Wash, trim and chop your spring (green) onions finely.
in a mixing bowl, using a fork, combine the cream cheese, grated Parmesan cheese, spring (green) onions and some cracked black pepper.
Place one slice of prosciutto on your work board and using a butter knife or spatula, spread some of the mixture to almost cover the prosciutto.
Place a piece of chicken at the top of your prosciutto and roll it on a slight angle to cover more surface area.
Place chicken pieces in a baking dish (you can oil the dish a little, but I find the ham has enough fat).
Bake in oven for 15 to 20 min at 400°F – 200°C.
Remove from oven, serve immediately with juices, garnish with fresh parsley. (This dish goes well with steamed green beans)
You can add herbs and even a little garlic to the cheese for a different flavour. There's no need to add salt as prosciutto and Parmesan are already salty.
