Yakitori means grilled chicken or grilled bird. It’s a delicious meal consisting of bamboo skewered pieces of chicken which are cooked over charcoal fire. This recipe uses a griddle so you can make it at home, but it will apply equally to your BBQ. If all you have is a frying pan, that’s fine too, it will still work.
You first make a sauce by concentrating the ingredients, this acts more like a glaze that’s later brushed on, for that intense umami taste.
Always finish cooking your chicken before adding the sauce as it can burn easily. Once you add the sauce, keep turning them over the heat a few seconds and it will be perfect.
