Dice the zucchinis into small pieces. Add to a hot pan with olive oil and toss until golden brown. Leave to cool slightly.
In a mixing bowl, add the eggs, cream, nutmeg, salt and pepper, flour, mix well.
Add the chopped sundried tomatoes, olives, basil leaves, minced garlic and grated Parmesan cheese.
Add the zucchinis without any of the liquid.
Oil the muffin pan (tin) liberally and pour in the mixture.
Bake in oven for 30-35 mins at 320°F – 160°C
Leave to cool 15 minutes before removing from pan.
