Add one whole egg to a mixing bowl
Add the baking soda
Add ¾ cup of plain flour
Add one cup of very cold beer
Mix batter mixture well
Add one teaspoon of fish sauce (optional)
Cut the dill and add to mixture
Add a few shakes of cayenne pepper, salt and mix well.
Heat half cup of vegetable oil in frying pan.
Lightly coat your fish in remaining plain flour, shake any excess flour.
Dip fish in batter and place in very hot oil.
If fish is approx one finger in size, 2 minutes each side should be sufficient (this can vary)
Turn over and cook both sides.
Place on paper towel to absorb any oil and serve immediately.
If you don't have beer handy, you can also use any type of very fizzy and cold soda water.
If you're oil is not hot enough, batter will lose it's crispness. Use vegetable oil for higher cooking temperature.
