Polenta, popular in Northern Italy, France and Switzerland, is made from boiled cornmeal. It starts out creamy, then sets firm as it cools. You can buy quick-cook polenta that’s ready in 5 minutes, but the traditional version takes 30 to 60 minutes to cook. These cheesy polenta chips are perfect as tapas or appetisers for a dinner party, especially served hot with basil aioli for dipping. They can also be grilled or roasted in the oven, or enjoyed at lunch with a fresh salad.
