Pit the olives if not already pitted.
Finely grate the Parmesan cheese.
In a food processor, add the butter, flour, Parmesan cheese and olives. Give it a few pulses until all mixed.
Roll out a sheet of cling film, add your mixture and roll it tightly in the cling film twisting each end so it looks like a large sausage. Refrigerate for 60 minutes.
Preheat your oven to 350°F – 180°C
Remove the plastic and slice into approx 1 quarter inch discs.
On a baking sheet pan, place on a non stick mat or some parchment paper.
Place the mixture discs leaving at least half an inch in between each cookie.
Bake for 15 minutes at 350°F – 180°C.
If you don't have a food processor you can do it by hand in a mixing bowl. Pre-chop the olives using a knife.
