Ingredients

• 1 large loaf of Italian bread or similar
• 6 X garlic cloves
• 2 handfuls of fresh parsley
• 100ml - Half cup of extra virgin olive oil (or butter if you prefer the French method)
• 130g - 4.5oz Mozzarella cheese
• 1/3 cup of grated Parmesan cheese
• Salt and pepper

Steps

• Step 1

  Peel 6 cloves of garlic.

• Step 2

  Wash and towel dry your parsley.

• Step 3

  Add garlic, parsley and olive oil to a food processor or blender and blitz.

• Step 4

  Slice (split) your Italian bread loaf in half (lengthwise).

• Step 5

  Spoon on your garlic oil mixture on your bread ensuring it’s all covered.

• Step 6

  Season with salt and pepper.

• Step 7

  Wrap in aluminium foil and bake in preheated oven for 10 minutes at 200ºC or 400ºF.

• Step 8

  While the bread is baking, grate the Mozzarella cheese.

• Step 9

  Remove bread from oven, unwrap from foil, cut it half so it’s in two pieces and sprinkle on the grated mozzarella cheese.

• Step 10

  Top with freshly grated Parmesan cheese.

• Step 11

  Bake in oven for a further 15 minutes or until cheese is brown at 200ºC or 400ºF.

  Little tips:
  Replacing the olive oil with fresh melted butter will give it a richer taste.
  You can also replace the garlic with mixed herbs if garlic breath is a concern.
  Always serve hot.
