Ever since my trip to India I’ve been using Garam Masala a lot. Garam masala is a warm, fragrant Indian spice blend made from ground whole spices like cumin, coriander, cinnamon, and cardamom.
This chicken recipe completely changed how I use garam masala. It’s full of warm Indian-inspired spice, yet so simple to make. The yoghurt, lemon, garlic, and garam masala marinade gives the chicken thighs a deep, smoky flavour and tender, juicy texture. Grilled until golden, it tastes like something from a restaurant and also homely, and it’s easy enough for a weeknight. Try and marinate the chicken overnight, or at least 2 hours,
Serve it with a fresh cucumber and mint salad and a creamy yoghurt tahini sauce for that cool, tangy contrast.
Wrap it in flatbread or serve it on a plate, it’s bold, healthy, and tastes amazing.
