A quick and simple recipe to make using chicken breasts. Made with olive tapenade which you can buy or make yourself, see my recipe. Baked in oven with chicken stock and marinara sauce keeping the breast tender and juicy.
Preheat your oven to 350°F – 180°C
Season the chicken breasts with salt and pepper on each side. Place a frying pan on high heat with olive oil and place your chicken breast top side down. Cook approx 3 minutes each side until brown. Turn off heat.
Coat the top of each chicken breast by covering with olive tapenade. Use your hands to pack firmly if needed. Top each breast with the mozzarella cheese.
Pour the chicken stock into the frying pan (not over chicken) along with the marinara sauce and bake in oven for 15 min at 350°F – 180°C or until cheese is brown.
Serve immediately, give the sauce a good stir before pouring on the side of chicken.
Serve with boiled pasta with a little olive oil and grated cheese.
