Ingredients

• 1 chicken breast
• 6 bacon rashers (cut not too thick)
• 1 tbs Italian mixed herbs
• 3 cloves of garlic
• 1 tbs Dijon mustard (or other types you enjoy)
• ¼ cup Maple syrup
• 1 tbs soy sauce
• Handful of fresh Italian parsley.

Steps

• Step 1

  Slice the chicken breast lengthwise into three pieces, then dice (cut into cubes) add to mixing bowl.

• Step 2

  Add the Italian herbs.

• Step 3

  Crush and add the garlic.

• Step 4

  Add cracked pepper.

• Step 5

  Add the mustard and mix well.

• Step 6

  Cut the bacon into strips.

• Step 7

  Place a chicken piece on each bacon strip and roll firmly.

• Step 8

  Place pieces on baking tray (ensure the end of the strip is on bottom).

• Step 9

  In a mixing bowl, add the maple syrup and soy sauce and mix well.

• Step 10

  Using a pastry brush, coat each piece of chicken.

• Step 11

  Bake for 30 min at 350°F – 180°C, adding another coat of syrup each 10 minutes.

• Step 12

  Remove from oven, place in a serving plate and top with fresh chopped parsley.

Little Tips

Place parchment paper on tray to avoid messy clean up.
For even cooking, place the bites onto a grill with a foiled tray underneath.
The more coats you add the glossier the bites will become.
If the bacon unwraps itself due to being too thick or too short, use toothpicks to keep it together.
